BAJAN Seasoning
(similar to the Green Package from DELISH)
1 lb white onions
5 oz green onions
2 oz thyme
2 oz parsley
2 oz marjoram
2 tbsp worcestershire sauce
4 scotch bonnet peppers
4 oz garlic
1/2 oz ground clove
1/2 tsp black pepper
4 1/2 tsp salt
1/2 tsp MSG (optional)
1/2 cups vinegar
HOW TO DO IT :-)
- Bajan:
" remove
the stems from the thyme and marjoram and place in a
blender with the vinegar, liquify. place the onions,
green onions, parsley, peppers adn garlic in a food
processor and process for 30 secs to 1 min. blend all
in a mixing bowl. stir in salt, msg (if used) wors.
sauce, ground clove and black pepper, bottle and refrigerate.
let stand for a week before using. will keep in the
ref. for up to 6 mos. If yuh got lickerish friends dat
lef home tuh eat it den yuh must mek twice de proportions"
changeable as you like it - Enjoy!
